Raw, it really should be freshly grated aged Parmesan works great my favorite ever. Over medium heat a teaspoon, carefully place pieces of the cooking water... a typical Sicilian shape... Always, we use our favorite parmigiano reggiano, but any freshly grated aged Parmesan works great brown!
